How they are packed
They are packed in 1 litres (1Kg) plastic bottles very similar to a milk bottle. They have a shelf life unopened in the fridge of between 3 and 6 weeks. Once they are opened they should be used within 72 hours. These are the same shelf life properties of an egg in its shell.
We only send them out to you as a fresh product, this enable you to then chose how you want to use them. If you want to freeze the whole bottle you can as there is some room in the bottle for the egg to expand. If you want to portion the egg out into more convenient meal portions you can, just remember to use a clean plastic tub for each portion. ( I split mine into 150g portions).
This way you are in control and are able to maximise the use of the egg white with the minimum amount of waste.

However each egg white is the equivalent of 30g on the scale. There are 33 egg whites in 1 litre (Kg)
Why are they so convenient?
We take all the work out of breaking eggs for you! No longer will you have to stand over two cups and crack eggs, drain off the whites, put the yolk in another cup, work out what your going to do with the yolks or throw them away, then pick out a little bit of shell that fell into the white and then... start to cook with them.
If you decide to drink the whites raw you also end up wondering whether it was safe to do so.
These eggs are shelled, separated and pasteurised to kill off any bacteria like salmonella while maintaining the structural and nutritional integrity of the egg white.
